Over Labor Day weekend, I spent an afternoon on my grandparent's farm. With spacious skies, fresh air, and endless fields of rolling grass, the prairie reminds me why I call it home. My grandparent's farm could come out of a children's book with the bright green tractors, dirt and ducks, and big red barn. A small garden near the house overflows with zucchini and cucumbers. The smell of bread and butter wafts from the windows of the house.

The farm is a place to escape from technology and learn to appreciate the simplicity of nature.

My sister and I love to go on "adventures" whenever we visit, exploring the land as it changes between seasons. This time we walked through a sunflower field, dancing between the plants as we weaved a path to the center of the field, the smell of plants and dirt filling the air. The bright green plants with brown flowers towered over our heads, the distinct yellow of the sunflowers fading as the seeds inside prepare themselves for the harvest. Twenty feet into the field, our entrance was completely obscured. The sunflowers appeared to go infinitely in every direction, an endless field of life and growth.

Taking a break to rest in the dry dirt, my sister and I stopped to sample the fruits of the flower's labor. The heads of the sunflowers were twice the size of my own, facing the ground instead of the sun from the sheer weight of a fruitful summer. It took two hands to lift the giant flowers up towards the sun; I never knew sunflowers could grow to be so unbelievably large.

We sampled the sunflower seeds, plucking them from the center of the flower, admiring the fuzz that surrounded each seed as if it was a ripe peach. The soft fuzz was a surprise for both of us, never imagining that sunflowers were or could be anything other than smooth. The seeds were pure white; the taste subtle. I felt a little closer to the earth that rested beneath my feet.

The rev of an engine drew us back out of the field. Hopping on a four-wheeler, we drove around the golden fields, the wind tangling my hair as we circled around hay bales, the sun peeking out behind the clouds to illuminate the golden grass. Dinnertime drew us back into the house and the scent of German cooking filled the air. We never fail to eat our fill.

At the end of the day, it's hard to leave the farm and go back to reality. I never get enough of the crisp air and piercing stars after a setting sun.

Even though zucchini is added to the batter, the vegetable flavor remains subtle. With the addition of cinnamon, nutmeg, and chocolate chips, the muffins are given the feel of a spice cake (with a bite of chocolate every now and then). A simple spread of butter is all these muffins need to make a lasting impression.

After my holiday in Hawaii, I drifted into island time. Without a salty ocean to wade into or a sandy beach to sip cocktails on, I opted for hot showers and drinking sweet, red wine in front of the television. After the sunshine and shaved ice, it was hard to go back to a reality full of work, workouts, and cooking my own dinner. I held onto island time much longer than I should have, trying to convince myself that it was okay to pretend I was on vacation when I clearly wasn't. I was putting off work, eating poorly, and didn't set foot into the gym for months.

Eventually even I realized these bad habits needed to change.

I set myself back to a proper work schedule. I completed a month long vegan challenge to jump start a healthier diet. Finally, after avoiding it for too long, I gathered up my courage and faced the gym this afternoon.

Before I caught island time fever, I prided myself on the fact that I regularly made it to the gym five or six hours a week. I was a fixture in the mornings, taking cycling classes and toning through weight lifting. For the first time in my life, the muscles in my biceps couldn't be crushed flat by a set of strong hands. I had calf muscles that surpassed those of my ballerina sister who can dance on the tips of her toes. I could even visibly flex my back muscles. I was proud of the sweat that dripped down my face and the results I achieved.

Then, I threw it all away.

I hesitantly walked into the gym this afternoon. The building rests only a couple blocks from where I live now, making it all the more shameful I haven't set foot in one since I moved. I got a membership to bribe myself into regular attendance and headed off to my first class in three solid months—circuit training. There were four of us in the class and it became blatantly obvious that I was having a hard time keeping up. Weights I used effortlessly just months before, suddenly felt like lead bricks in my hands. I was more than half a beat behind in my jumping jacks and I couldn't jump rope to save my life. In hindsight, I really should have chosen a yoga class.

I slowly walked back home with a proverbial tail between my legs, my muscles wobbling like a bowl full of Jello. The "truths" I had been telling myself (You're still in shape! You didn't get winded walking up that flight of stairs, it must have been from the heat) unequivocally became lies. Luckily, it's never too late to head back to the gym and fix the ails of neglect (which I'll do right after I make another batch of these scones).

These coconut scones are a delicate, subtle way to begin the day. These scones are a triple coconut threat, holding coconut oil, coconut milk, and coconut flakes in their flaked layers. The scones are dairy/egg-free, but you'd never guess it. The finished scones are glazed in a sweet coconut glaze before serving, which adds just the right amount of sweetness. This is my new favorite breakfast sweet and may be the best scone recipe I've shared with you.

For the first time in my life, I'm living alone. I've moved to a city I know well, but it's been long enough since I've dwelled here that I am surrounded by strangers. Moving is about starting over, starting fresh, making new friends, and seeking out new experiences. It's building a new chapter in the book of life. Right now I'm in the "making new friends" stage and it feels harder to do now then when I was younger (of course, it doesn't help that I'm working two jobs and taking 10 graduate credits over the summer). While I have mixed feelings about living alone, I keep reminding myself that living alone isn't the same thing as being alone.

They are, in fact, two very different circumstances.

Living alone means sticking a spoon directly into the jar of peanut butter and double dipping to my heart's content. Living alone means watching an entire season of Big Love in a single day without having a soul to judge me for it. Living alone means forgoing pants when the temperatures rise without worrying about public indecency. Living alone means letting the dishes pile up in the sink until I decide I can't handle the mess. Living alone means doing impromptu dances to my favorite songs while baking and getting brownie batter all over the kitchen floor.

Living alone means creating a sanctuary for myself where I only need to answer for myself, a sanctuary I can then share with those I care most about.

Some days I do get plagued by loneliness, an inevitable factor in life whether you live alone or with others. It's hard moving somewhere new without having that network of love and support in the next room or halfway across town. That network still exists, but it's farther away than it was before. To temper the occasional lonely feelings, I treat myself to date nights; I'll buy myself a new red wine, cook myself a three course dinner, and dine by candlelight with a favorite television show sitting across the table. I'll escape into books, making lifelong friends with the characters buried in the pages. I roller blade through the neighborhood, finding a good dose of fresh air to cure most of life's ails.

Yes, being alone and living alone are too very different situations. Living alone means I can bake muffins at an obscenely early hour on a Saturday morning, banging about the pots and pans without apology. Oh, how I do like to bang around those pots and pans.

Cherry Cream Cheese Muffins are soft, sweet, and tangy. Fresh cherries are pitted, halved, and mixed into a whole wheat oatmeal muffin batter. Before heading into the oven, the muffin tops are swirled with cream cheese and sprinkled with sugar. The muffins are utterly light, with a crumb so small and so moist that they melt in your mouth. The recipe is vegan, but you can easily use non-vegan ingredients if they are already in your pantry. With a cup of tea or a mug of coffee, these muffins will brighten any morning.
