Sprouted Wheat Vanilla Chai Bars

The world is powered through small acts of compassion: a simple text message to say thinking of you to a friend, taking time to truly listen to another person, giving a voice to the needs of others, a genuine smile towards a stranger. Though compassion comes in many different methods and is as varied as people themselves, showing compassion does not come easily to me. I am sometimes awkward with words, the right order often failing to appear. Instead, I channel my feelings and thoughts of goodwill into the food that I bake. I may not be able to speak away the worry or ease the pain, but I can pull up a chair to the table and share burdens and bars alike.

Compassion towards others, in acts both big and small, comes in many forms—even dessert—which is why I wanted to bake up something sweet and special using one of my new favorite flours: sprouted wheat.

Sprouted wheat flour is a fine, soft textured flour with a mild, nutty flavor. The flour is made from white whole wheat berries which are sprouted, dried, and milled. The process of sprouting enhances the nutritional benefits of the 100% whole grain flour, improving the digestibility and providing a good source of fiber. With an inherent sweetness and creamy appearance, the flour is quickly becoming a pantry staple in my kitchen.

For everyday use, sprouted wheat flour can be substituted 1:1 for whole wheat flour or up to 50% for all-purpose flour in your favorite recipes. For example, if a recipe calls for 1 cup of all-purpose flour, you can use 1/2 cup all-purpose flour and 1/2 cup sprouted wheat flour instead.

These vanilla chai bars are similar to a sweet, spiced blondie. The recipe starts by whisking together sprouted wheat flour with a leavener, chai spice, and salt. The dry ingredients are set aside and the liquid ingredients are prepared.

In a saucepan, butter and brown sugar are melted together until they form a smooth paste. Once the mixture cools, eggs and vanilla extract are stirred into the mixture. The flour is gradually added and the batter is stirred until uniform. Sprouted wheat flour absorbs liquids and holds water better than other flours, resulting in a final product that stays moist.

The batter will be quite stiff when fully mixed. I recommend using a spatula to transfer the batter to a prepared 9" x 13" baking pan. Once there, use your hands to press the batter into an even layer. Using any other tool here is a fool's errand; the batter sticks to the tool and pulls away from the pan, making a simple task into a more complicated process.

The texture of the bars can be customized to fit your taste. For chewy bars, bake for 17-21 minutes, and for bars with a cake-like texture bake between 23-27 minutes. For my ideal texture, I baked the bars for 22 minutes, achieving the best of both worlds.

When the bars come out of the oven, they should be cooled for at least 15 minutes, or until warm to the touch, before adding the topping. The bars are brushed with a layer of butter and sprinkled with chai-spiced sugar. Then, the pan is shaken until the sugar forms an even layer and left to cool completely before slicing. Alternatively, the bars can be topped with a drizzle of white chocolate. However, I prefer the crunchy texture and contrast the sugar adds to the bars. The opportunity to lick granules of chai-spiced sugar from the tips of my fingers and corners of my lips is a source of joy.

Sprouted Wheat Vanilla Chai Bars
Recipe from King Arthur Flour

Bars
2 cups (227 grams) King Arthur Sprouted Wheat Flour
1 teaspoon baking powder
1/4 teaspoon salt
4 teaspoons chai spice*
2/3 cup (150 grams) unsalted butter
2 cups (425 grams) light brown sugar
2 large eggs
1 tablespoon vanilla extract

Chai Spice Topping
3 tablespoons granulated sugar
3/4 teaspoon chai spice
1 tablespoon unsalted butter, melted

Preheat the oven to 350°F (180°C). Lightly grease a 9" x 13" pan.

In a medium bowl, whisk together the flour, baking powder, salt, and chai spice until well blended. Set aside.

In a medium saucepan over medium heat, melt the butter. Add the brown sugar and heat, stirring constantly, until the mixture comes together and forms a fairly smooth, shiny paste, about 3 to 5 minutes. Transfer the hot mixture to a medium bowl and allow it to cool for 5 minutes, stirring occasionally.

Mix in the eggs and vanilla. Add the flour mixture and stir until well combined; the batter will be stiff. Spread the batter evenly into the prepared pan.

Bake the bars for 17 to 21 minutes (for chewy bars) or 23 to 27 minutes (for cakier bars), until a toothpick inserted in the center comes out with a few moist crumbs clinging to it; the top crust will have risen and fallen.

Remove the bars from the oven and allow them to cool for 15 minutes.

For the topping, mix together the sugar and chai spice in a small bowl.

Gently brush the melted butter evenly over the surface of the warm bars, then sprinkle on the spiced sugar, shaking and tilting the pan to distribute the sugar evenly.

Allow the bars to cool completely, then cut them into squares.

*To make homemade chai spice, mix together 1 1/4 teaspoons cinnamon, 1 teaspoon ginger, 1 teaspoon cardamom, 1/2 teaspoon cloves, 1/4 teaspoon finely ground white pepper, and 1/2 to 1 teaspoon orange zest

Cinnamon Star Bread

When the weather turns cold and the snow starts to fly, I use my oven to fill my home with the scents of the season—warm vanilla, spiced cinnamon, and intoxicating cocoa. The kitchen is my sanctuary, a place of peace and shelter from the stress the holidays can create. Baking is one of the ways I show and share my love towards friends and family. During this time of year, there is a lot of love to go around.

As a holiday tradition, each year I look for a new recipe to serve on Christmas morning. Since the days leading up to the holidays can be busy, the recipe needs to be simple, sweet, and easy to accomplish—there is no time to spend hours in the kitchen. When I found this recipe for Cinnamon Star Bread from King Arthur Flour, I knew it was the perfect fit. Though this twist on the classic cinnamon roll may not suggest simplicity, the reality is that this recipe does come together easily. While the bread takes about three hours from start to finish, only about a half hour of that time is active. While the dough rises, you are free to move about the house and do other things. Perhaps, best of all, the pull-apart shape of the bread is already suited for sharing. 

The sweet bread dough comes together quickly and easily. All dough ingredients are tossed into a mixing bowl and mixed either by hand (I prefer using a dough scraper) or machine until the dough comes together. Then, the dough is kneaded—again, either by hand or machine (using a dough hook with a stand mixer or bread machine)—for several minutes until it takes on a soft, smooth appearance. The process is simple, and the dough itself is very forgiving.

I prefer using all-purpose flour in this recipe because it yields a more tender dough. Traditional bread flour forms a more structured dough because bread flour has more protein than all-purpose flour, and forms more gluten when kneaded. Therefore, using a flour with less gluten, like all-purpose flour, creates a softer dough. In addition to the flour, nonfat dry milk and potato flour (or instant mashed potato flakes) are also added to create a tender bread. Don't worry—the potato doesn't add any flavor here; it just helps the bread retain moisture after baking. 

Once kneaded, the dough is placed in a lightly greased bowl, covered with a clean kitchen towel, and left to rise at room temperature for one hour, or until it doubles in size.

Once the dough has risen, divide the dough into four equal parts. Form the dough into balls and let rest for 15 minutes. Don't skip this step—the resting process relaxes the gluten in the dough and makes the dough easier to roll out. When time is up, roll out the dough into four 10-inch circles. I realize that sounds intimidating (I have a difficult time rolling out anything to a perfect size), but there's a quick trick that can help with the job. Trace the outline of a 10-inch springform or tube pan onto parchment paper, cut out the circle, and use it as a guide when rolling out the dough. It not only helps you visualize the size you need, but you can periodically place the parchment circle on the dough to check your progress.

The best part of the bread is the sweet, cinnamon sugar layers that saturate the loaf. To assemble the layers, place one 10-inch circle of dough onto a sheet of parchment paper. Brush the dough with a thin layer of beaten egg and sprinkle on 1/3 of the cinnamon sugar mixture, taking care to leave a 1/4-inch border around the edges. Repeat this process two more times, placing each layer on top of the other and adding the cinnamon sugar mixture. Place the last circle of dough on top, leaving it bare.

After making this bread several times, I found it is easier to twist the layers of dough if the dough circles are even. Even though you may have made best attempts to make perfect 10-inch circles, it's likely they still vary slightly on the edges—and that's okay. Simply place your parchment circle on top and use a pizza cutter to trim the very edge of the layers to an even size. 

Once the dough is stacked and layered with the cinnamon sugar mixture, it is time to cut the dough into strips to twist. Place a 2 1/2 to 3-inch round cutter on the center of the dough to use as a guide (if you don't have this size cutter, a canning jar lid will work as well). Use a bench knife or sharp knife to cut the dough into strips. Start by cutting the circle into fourths, and then cut each fourth in half and then in half once more to create 16 even strips. 

To twist the layers into the star pattern, take two adjacent strips and twist them away from each other twice (twist one clockwise, twist the other one counterclockwise). Since I do not have the fine motor skills to do both strips at the same time, I twist them separately and then pinch them together along the ends to hold them together. I also found it is easier to twist the dough if you lift it up slightly so it does not brush against the other strips of dough. 

Using the parchment paper, transfer the star to a baking sheet, cover with a clean kitchen towel and let it rise for another 45 minutes, or until noticeably puffy. While the loaf rises, preheat the oven. Just before baking, brush the loaf with a thin layer of beaten egg and bake until golden brown, about 12-15 minutes.

To serve the bread in the morning, I recommend baking the loaf the evening before and reheating the loaf in the oven the next morning at 350°F for 5-10 minutes, or until heated through. This bread is not a good candidate to raise overnight because the cinnamon sugar has a tendency to leak out of the loaf in a thin syrup if left too long. Since we want to keep as much flavor in the loaf, it is best to bake it on schedule. Reheating the bread in the oven will keep the texture and retain the moisture.

Sprinkle with powdered sugar after baking and serve warm. If you are feeling particularly festive, serve the bread alongside a mug of hot cocoa. In fact, I recommend it.

Cinnamon Star Bread is a pull-apart style bread that gives a twist to the classic cinnamon roll. The bread is layered with cinnamon sugar and twisted into a star shape. As the loaf bakes, the cinnamon sugar caramelizes the outside edges while the interior stays soft and tender. Sprinkle with powdered sugar and serve warm. Your friends and family will adore this sweet addition to your holiday table.

Cinnamon Star Bread
Recipe from King Arthur Flour

Yields 1 star loaf, or 8-12 servings

Dough
3/4 cup + 2 to 4 tablespoons (198-227 mL) lukewarm water, enough to make a soft, smooth dough
2 cups (241 grams) King Arthur Unbleached All-Purpose Flour
1/4 cup (4 tablespoons or 57 grams) unsalted butter, at room temperature
1 teaspoon Buttery Sweet Dough Flavor, optional; for enhanced flavor
2 teaspoons instant yeast, SAF Gold instant yeast preferred
2 tablespoons granulated sugar
1 teaspoon salt
1/4 cup (35 grams) Baker's Special Dry Milk or nonfat dry milk
1/4 cup (46 grams) potato flour or instant mashed potato flakes

Filling
1 large egg, beaten
1/3 cup (64 grams) cinnamon-sugar, or your own mix of cinnamon sugar*

To make the dough: Combine all of the dough ingredients and mix and knead — by hand, mixer, or bread machine — to make a soft, smooth dough. Place the dough in a lightly greased bowl, cover, and let it rise for 60 minutes, until it's nearly doubled in bulk.

Divide the dough into four equal pieces. Shape each piece into a ball, cover the balls, and allow them to rest for 15 minutes.

On a lightly greased or floured work surface, roll one piece of dough into a 10" circle. Place the circle on a piece of parchment, brush a thin coat of beaten egg on the surface, then evenly sprinkle with 1/3 of the cinnamon-sugar, leaving 1/4" of bare dough around the perimeter.

Roll out a second circle the same size as the first, and place it on top of the filling-covered circle. Repeat the layering process — egg, cinnamon sugar, dough circle — leaving the top circle bare.

Place a 2 1/2" to 3" round cutter in the center of the dough circle as a guide. With a bench knife or sharp knife, cut the circle into 16 equal strips, from the cutter to the edge, through all the layers.

Using two hands, pick up two adjacent strips and twist them away from each other twice so that the top side is facing up again. Repeat with the remaining strips of dough so that you end up with eight pairs of strips. Pinch the pairs of strips together to create a star-like shape with eight points. Remove the cutter.

Transfer the star on the parchment to a baking sheet. Cover the star and let it rise until it becomes noticeably puffy, about 45 minutes.

While the star is rising, preheat the oven to 400°F (or 205°C).

Brush the star with a thin coat of the beaten egg. Bake it for 12 to 15 minutes, until it's nicely golden with dark brown cinnamon streaks; the center should register 200°F (or 93°C) on a digital thermometer.

Remove the loaf from the oven and allow it to cool for about 10 minutes before serving.

* Stir together 1/3 cup granulated sugar with 4 teaspoons ground cinnamon for a homemade cinnamon sugar blend.

Traditional Challah

March 20 marks the first day of spring. Though, as Henry Van Dyke said, the first day of spring and the first spring day often have different timing. I hope that today is the latter for you. The first spring day came nearly a month ago, which is unprecedented in the upper Midwest. To celebrate these fortuitous weather patterns, I am baking foods that remind me of the spring season. 

In partnership with King Arthur Flour, each month I want to challenge you with a new recipe to help you grow and develop as a baker. This month we're exploring challah. Challah is a Jewish bread that is served on the Sabbath and other Jewish holidays. The soft bread is enriched with eggs and olive oil to bring color and flavor. It is reminiscent of brioche, which uses fewer eggs and butter instead of oil. With a hint of honey for sweetness, challah is a mildly decadent breadgreat for soaking up gravy and even better for making French toast.

To start, the liquid ingredientswater, yeast, olive oil, honey, eggswhisked together. The flour and salt are gradually added and stirred in with a bowl scraper. I prefer to use all-purpose flour because it creates a loaf with a soft and tender interior. When the dough looks shaggy, turn the dough out onto a lightly floured surface and bring it into a ball.

To knead, use the heel of your hand to push the dough downwards at an angle to stretch it away from you. Rotate the dough 90 degrees, fold it in half, and repeat the process. As the dough is kneaded, you will be able to feel the dough firm up as the gluten forms. After 5-10 minutes of kneading by hand, the dough will begin to feel elastic and spring back under your touch. When it has the appearance of the dough shown in the photograph in the top left, it is ready for the first rise.

I prefer to knead by hand to feel the texture of the dough change, but the dough can also be kneaded using a stand mixer on low speed with a dough hook attachment. Place in a bowl, cover, and allow to rise for 1 1/2 to 2 hours, or until doubled in size.

When the dough has risen, divide it into four equal pieces. Shape these pieces into logs. Then, using your hands, start in the middle of each log and apply pressure with the heels of your hands, rolling the dough back and forth. Gradually move your hands towards the ends of the log to stretch out the shape. The process should be repeated until each log is 16 inches in length and approximately 1 inch wide. Take the ends of the strands and pinch them together to start forming the loaf.

While challah can be braided into 3-, 4-, 5-, or 6-strand braids, I will be showing you the 4-strand braid. The extra strand gives the loaf a unique, braided appearance I enjoy. However, if you are interested in other strand braids, there are many tutorials available online

To help illustrate the process, the dough strands will be labeled 1 through 4, where 1 is always located on the far left. The numbers indicate the position of the strands; it will not be necessary to remember which number originally applied to each strand. Once the tops of each strand have been firmly pinched together, take strand 1 (far left) and place it between strands 3 and 4. Please note that all strands will cross over the top of the others; they will never cross underneath.

Strand 2 is placed between strands 3 and 4.

Strand 4 is placed between strands 1 and 2.

The process is then repeated. Strand 1 is placed between strands 3 and 4 again.

Keep following this pattern until the strands have been braided. Pinch the remaining ends of the strands together and tuck under the loaf.

The loaf is brushed with an egg wash, which will give it a deep golden color when baking. Sesame and poppy seeds are sprinkled heavily over the top for flavor and visual interest. The seeds stick well to the egg wash, keeping them firmly attached to the bread (especially while cutting and toasting and eating).

The bread bakes for approximately 35 minutes. When the bread has browned to your liking (around the 20-minute mark), tent aluminum foil over the bread to prevent further browning. This is one of the tricks for getting a perfectly golden loaf each time.

Challah is a classic Jewish bread enriched with eggs, olive oil, and honey. The loaf has a soft, tender interior with a browned crust. Often braided and sprinkled with seeds, it is a bread made to grace the dinner table. Challah is great as a side for soup and gravies, or simply spread with butter and jam. If your challah lasts several days, turn the remaining slices into French toasttrust me, it's divine.

Traditional Challah

Yields 1 large loaf

Dough
3/4 cup (177 mL) lukewarm water
2 1/4 teaspoons (7 grams) active dry yeast
1/3 cup (80 mL) olive oil
1/4 cup (85 grams) honey
2 large eggs
1 1/2 teaspoons (9 grams) salt
4 cups (480 grams) King Arthur Unbleached All-Purpose Flour

Topping
1 large egg
1 tablespoon water
Black and White Sesame Seeds, optional
Poppy Seeds, optional

In a large bowl, whisk together the water, yeast, olive oil, honey, eggs, and salt. Gradually add the flour and stir with a bowl scraper until combined.

Turn out onto a lightly floured surface and knead the dough for 5-10 minutes, or until elastic in appearance. Place into a lightly greased bowl, cover with plastic wrap, and allow to rise in a warm place for 1 1/2 to 2 hours, or until doubled in size.

Turn out dough onto a clean surface and divide into 4 even pieces and shape into logs. Using your hands, roll each log into a 16 inch- long rope. To create a 4-strand braid, pinch all four strands together at the top. From left to right, number the location of the strands 1-4. Cross strand 1 over strand 3. Cross strand 2 over strand 3. Cross strand 4 over strand 2. Repeat until you have reached the ends and pinch the loose ends together. Cover loaf with a clean towel and allow to rise an additional 30-45 minutes, or until doubled in size.

Preheat oven to 375 degrees F (190 degrees C).

To create the egg wash, whisk together the large egg and water. Brush over risen loaf. Sprinkle with sesame and poppy seeds until covered.

Bake for 20 minutes. Tent aluminum foil over the loaf to prevent over-browning and continue baking for another 15-20 minutes. The loaf will appear golden brown and should reach an internal temperature of 195 degrees F (90 degrees C) when done.
